Simple and quick blender recipe for carrot cake, finished with a chocolate frosting that forms a crunchy shell.

Ingredients
- 1cup (220 ml) de Oil
- 4units de Eggs

- 1cup de Cocoa Powder (or Chocolate Drink Mix)
- 1cup de Sugar
- 2tablespoons de Butter or Margarine
- 5tablespoons de Milk
Instructions
In the blender, add and blend the oil, eggs, carrots (medium or two large ones), and sugar until the mixture is smooth, for about 2 minutes.
Dica: Blend well to completely dissolve the carrot.
In a bowl, sift the three cups of all-purpose flour.
Dica: Sifting the flour makes the batter lighter and softer.
Add the tablespoon of baking powder to the dry ingredients and mix briefly.
Dica: Mix the baking powder with the flour before adding the liquid.
Pour the liquid mixture from the blender into the bowl with the dry ingredients and gently fold the batter with a wire whisk or spatula.
Dica: Finish mixing close to the bottom of the bowl with a spatula.
Transfer the batter to a baking pan (suggested size 8x13 inches) that has been greased and floured.
Dica: Scrape all the batter out of the bowl.
Place the cake in a preheated oven to bake for approximately 35 to 40 minutes, depending on your appliance.

While the cake is baking, prepare the frosting: in a saucepan, mix the cocoa powder, sugar, butter, and milk.
Dica: You can use chocolate drink mix instead of cocoa powder.
Heat the frosting mixture over the stove, stirring constantly until it begins to pull away from the bottom of the pan, indicating the correct consistency.
Dica: Do not stop stirring during this step to ensure the glaze sets properly.
As soon as the cake comes out of the oven, pour the hot glaze over it while it is still hot.
Dica: Spread the glaze evenly with a spoon, covering the edges.
Wait about 20 to 30 minutes after applying the glaze for it to begin to set and form the crunchy shell before cutting the cake.
Dica: Run a knife around the edges to loosen the cake before cutting once the shell has slightly firmed up.
