An easy and reliable carrot cake recipe with a classic chocolate glaze that makes the cake very moist.

Ingredients
- 2,5cups de All-purpose flour
- 2cups de Granulated sugar
- 2medium de Carrots
- 200ml de Oil
- 4 de Eggs
- 1tablespoon de Baking powder
- 1/2cup de 50% Dark Chocolate
- 1/2cup de Chocolate drink mix (like Nesquik)
- 1heaping tablespoon de Margarine
- 1cup de Granulated sugar (for the glaze)
- 150ml de Milk
- Shredded coconut opcional
Instructions
In a blender, add the chopped carrots, oil, sugar, and eggs.
Dica: If your blender is weak, mix the sugar in a separate bowl afterward. If you prefer, the carrots can be grated, but blend well to avoid chunks.
Blend the mixture in the blender until it is smooth and well combined.
Dica: Check that the blender motor is functioning correctly.
Transfer the liquid blended contents to a mixing bowl.
Dica: The batter that forms should have a nice color.
Fold in the all-purpose flour and baking powder to the wet mixture, mixing well until a smooth batter is obtained.
Dica: Mix gently after adding the flour to maintain a fluffy texture.
Grease a bundt pan (or rectangular pan) with cooking spray or shortening.
Dica: Using non-stick spray ensures the cake doesn't stick and releases easily.
Pour the batter into the greased pan.
Bake the cake in a preheated oven at 350°F (180°C) for approximately 40 minutes.
Dica: After 40 minutes, the cake should be baked and a toothpick inserted should come out clean.
Prepare the glaze by mixing the 50% dark chocolate, chocolate drink mix, margarine, sugar (for the glaze), and milk in a saucepan.
Dica: A 50/50 ratio of the two chocolates is suggested for a balanced flavor.
Heat the glaze mixture over the stove, letting it simmer for about 10 minutes, until it reaches a consistency that soaks into the cake.
Dica: Do not let the glaze boil too long, or it will set into a hard shell; the goal is a soft glaze that moistens the cake.
Remove the cake from the oven and, while still warm, poke holes across the surface with a toothpick to allow the glaze to penetrate.

Pour the hot chocolate glaze over the cake (either still in the pan or after being removed).
