- 100ml de Ice-cold water

Sift the confectioners' sugar into a bowl to ensure there are no lumps, as it tends to clump up.
Dica: Sifting the sugar is important because it can harden.
Add the powdered milk along with the confectioners' sugar to the bowl.
Dica: Instant powdered milk is preferable, but any type will work.
Add the ice cream stabilizer, which is an essential ingredient for the texture.
Dica: The stabilizer is what keeps the topping firm.
Pour the very cold water (tap water is fine if you don't have bottled) over the dry ingredients and the stabilizer.
Dica: The water should be very cold to help with consistency.
Beat the mixture in a stand mixer for about 3 to 5 minutes, until the topping reaches a very firm consistency.
Dica: The beating time varies depending on the mixer's power.
Optionally, add food coloring (like the blue shown in the video) and continue beating to incorporate the color.
Dica: The topping accepts coloring well.
Use the stiff topping to decorate with a piping bag, cover cakes, or serve as a dessert, as its texture is stable and won't run.
