Ingredients
- 3units de Eggs
- 1,5cup de Sugar
- 1/4cup de Corn Oil
- 1cup de Orange Juice (freshly squeezed)
- 2cup de All-Purpose Flour
- 1tablespoon de Baking Powder
- 1/2cup de Powdered Sugar (Confectioners' Sugar)
- to taste (little by little) de Orange Juice
Instructions
In a bowl, beat the eggs, sugar, and corn oil until you have a light and fluffy cream.
Incorporate the freshly squeezed orange juice (use Valencia or another variety of your choice) into the creamy mixture, stirring again.
Sift the all-purpose flour and baking powder directly over the wet batter.
Dica: Sifting the dry ingredients helps make the cake fluffier and lump-free.
Mix gently until the batter is smooth and homogeneous, with no traces of flour left.
Pour the batter into a greased and floured pan (this batter volume is enough for approximately two 8x4-inch loaf pans).
Bake in a preheated oven at 350ºF (180ºC) for about 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
While the cake bakes, prepare the glaze by mixing the powdered sugar with small additions of orange juice, stirring until you reach a creamy consistency that does not run off completely.
Dica: Adding too much orange juice will make the glaze too thin.
Spread the glaze over the cooled, baked cake, allowing it to drip slightly down the sides for a nice presentation.
