A very easy recipe for cream cookies, ideal for selling, with tips on sourcing the cream.

Ingredients
- Heavy Cream (or Crème Fraîche)
- Cornstarch
- Sugar
- 300g de All-purpose flour
- Egg yolks
- Baking powder
Instructions
In a bowl, combine the heavy cream (or crème fraîche), egg yolks, and sugar. Lightly mix the ingredients.
Dica: If you purchased the cream, the process is the same. Start by mixing with a spoon or spatula.
Add the cornstarch to the mixture and incorporate it with the other ingredients.
Dica: Be careful not to make a mess when adding the starch.
Add the baking powder to the mixture. Continue stirring well with the spatula until the ingredients are combined.
Dica: The sugar will help dissolve thick cream, but if necessary, you can use a whisk.
Begin adding the all-purpose flour gradually. Use your hands to incorporate the flour until the dough reaches the correct consistency.
Dica: Add the flour little by little to prevent the dough from becoming too dry. Do not knead the dough; just mix briefly (the goal is to avoid developing gluten).
The dough should be moist, soft, and not sticky, but also not too hard. As soon as it reaches this point, stop adding flour.
Dica: The dough should have a consistency that seems crumbly but with internal moisture.
On a lightly floured surface, roll out the dough into a log or cylinder about one finger-width thick.
Dica: Use very little flour on the surface to help with rolling it out.
Use a cookie cutter to slice the dough into pieces, keeping a reasonable distance between them on the baking sheet, as the cookies will spread slightly.
Dica: Don't worry if the cookies aren't all the same size; the result is rustic.
Place the cookies on a greased baking sheet or one lined with parchment paper (if using a non-stick spray, you don't need to flour the pan).
Dica: Preheat the oven to approximately 350ºF (180ºC).
Bake the cookies until the bottom is lightly golden. They should not brown on top.
Dica: Baking time may vary. Remove them from the oven as soon as the base is lightly golden, as the top should remain soft.
Immediately after removing them from the oven, while they are still warm, roll the cookies in granulated sugar to finish.
Dica: There is no need to wait for them to cool or dampen the cookies before coating them in sugar.
