Instructions
Using a mortar and pestle, prepare the seasoning paste by combining salt, garlic, herbs, and pepper, mashing coarsely enough to leave visible small pieces.
Dica: Leave small chunks of salt, garlic, and herbs in the seasoning.
Add the lime juice to the seasoning paste and mix vigorously until a thick paste is achieved.
Prepare the pork shoulder by cutting it lengthwise and opening it flat like a butterflied cut, then rub the seasoning paste over the entire surface.
Distribute the sausage over half of the seasoned pork shoulder and fold the other half over the top, covering the filling.
Tie the stuffed pork shoulder tightly to ensure it maintains its shape during cooking.
Dica: Tie it firmly so it stays compact.
Line a roasting pan with onion slices, add the bay leaves on top, and finally, place the tied pork shoulder over the leaves.
Roast in a preheated oven at 400ºF for a minimum of 4 hours, until the pork shoulder is completely cooked and the skin is golden brown.
Serve the pork shoulder sliced, accompanied by the roasted onions that served as the base.
