Ingredients
- 2tablespoons de Rice vinegar

- 1tablespoons de Thick, sweet soy sauce
- 2units de Sliced spicy chili (optional/to taste) opcional
- to taste de Chopped scallions
- 1pinch de Ready-made chicken seasoning
- 1pinch de Curry powder
- Cooked rice (long-grain)
- 1unit de Fried egg opcional
- Grilled shrimp opcional
- Roasted shelled peanuts opcional
- Fried garlic opcional
Instructions
Prepare the quick pickle: In a bowl, mix the rice vinegar and sugar until dissolved.
Add the sliced cucumber, grated carrot (raw), and sliced chili to the sugar vinegar solution. Stir in the finely chopped half small onion and set the mixture aside.
Dica: If preferred, use Malagueta or Dedo de Moça chili. Indonesian bird's eye chili is ideal, but can be substituted.
Heat one tablespoon of vegetable oil in a skillet or pan over high heat.
Fry the 250g of ground chicken breast, seasoning with a pinch of black pepper and salt, until well browned.
Dica: You can grind the chicken in a food processor or ask the butcher to do it.
Add another tablespoon of oil and the chopped half onion to the chicken mixture. Then, add the three large minced garlic cloves and sauté.
Dica: Indonesians really appreciate the flavor of garlic.
Stir in the thick, sweet soy sauce, the two sliced chilies (adjust to taste), chopped scallions, ready-made chicken seasoning, and curry powder.
Dica: Local cuisine is spicy, adjust the amount of chili according to your palate.
Incorporate the cooked rice (use a long-grain variety) into the chicken and seasoning mixture, stirring well to coat all ingredients.
Dica: Taste and adjust the salt, chili, and sweet soy sauce until you achieve the desired flavor.
Transfer the fried rice to individual serving plates.
Finish assembling the dish by adding the typical accompaniments, such as a fried egg, grilled shrimp, and roasted shelled peanuts. If desired, sprinkle with fried garlic on top.
