Super easy recipe for cheese bites made with a potato dough, ideal for a quick snack or side dish.

Ingredients
- 4unit de potato

Instructions
Peel and cut the potatoes into medium chunks and boil them in water for approximately 20 minutes, or until easily pierced with a fork.
After cooking, drain all the water and place the cooked potatoes in a large bowl.
Mash the potatoes using a potato ricer or masher until you achieve the smoothest possible puree.
Dica: A few slightly larger pieces are acceptable, but an even puree is ideal.
Season the mashed potatoes with salt to taste, adding gradually and tasting as you go.
Add half a cup of cornstarch to the mash. Mix first with a spoon and then with your hands until you have a homogenous dough that doesn't stick to your hands.
Dica: Do not add excess cornstarch so that the bites remain light and melt in your mouth.
Take portions of dough the size of ping-pong balls, flatten them into circles, and fill with cubes of mozzarella cheese (or your preferred cheese).
Dica: Use a cheese that stretches well, like mozzarella.
Cover the filling with another piece of potato dough, sealing the bite tightly to prevent any gaps.
Heat oil in a pot. To check the ideal temperature, drop a small piece of the dough in; if it starts to bubble, the oil is ready for frying.
Fry the bites individually until they turn golden brown.
Dica: Fry in small batches, depending on the size of your pot.
Remove the fried bites and place them on paper towels to absorb any excess oil before serving.
