A practical recipe for a Key Lime Pie flavored freezer pop (also known as ice pops or ice tubes), ideal for selling and beating the summer heat.

Ingredients
- 1can de Sweetened condensed milk
- 150ml de Freshly squeezed lime juice
- 1carton de Heavy cream
- 150ml de Milk
- 2units de Lime zest
- 1/2package de Graham crackers or simple butter cookies
Instructions
In a large bowl, combine the sweetened condensed milk and the fresh lime juice.
Dica: Whisk vigorously with a wire whisk (balloon whisk) until the mixture thickens and forms a dense cream, mimicking the texture of pie filling.
Add the carton of heavy cream and the milk to the mixture, blending well with the whisk until you achieve a smooth and creamy base. (Optional: Adding more milk will make the freezer pop less creamy and increase the yield).
Dica: To maintain the creamy pie texture, do not add more milk than necessary.
Gently fold in the zest from two limes into the creamy mixture.
Crush half a package of Graham crackers or simple butter cookies until they resemble coarse crumbs (a coarse flour/sand consistency). This can be done manually or in a blender.
Dica: These crumbs will be used to give the freezer pop the 'pie crust' base texture.
Prepare the freezer pop plastic bags. To assist with filling, cut the tip off one plastic bag to use it as a makeshift funnel.
Dica: Alternatively, use a real funnel to fill the bags.
Fill approximately one quarter of the space in a plastic bag (which will be the 'crust' layer) with the crushed cookies.
Dica: The crushed cookie mixture should go first into the bottom of the bag, before the creamy mixture.
Carefully fill the next two-thirds of the bag with the creamy lime mixture, using the cut plastic bag as your pouring utensil.
Dica: Be sure to leave enough space at the top for sealing.
To seal, squeeze out the excess air from the bag, pinch and twist the top, creating the characteristic freezer pop loop with the plastic itself to seal it.
Dica: Removing all the air before tying the knot ensures the freezer pop doesn't develop side pockets of air and results in a fluffier texture.
Place the freezer pops in the freezer until they are completely solid.
Dica: For a more professional finish when selling, tie a decorative ribbon around the knot after freezing and trim the top point of the bag slightly to expose some of the contents.
