Instructions
Prepare the Chocolate Popsicle: Combine the sweetened condensed milk, heavy cream, cocoa powder (use unsweetened cocoa powder, not chocolate drink mix), and whole milk in a blender.
Dica: Use cocoa powder, not chocolate drink mix.
Pour the chocolate popsicle mixture into appropriate molds or disposable cups, filling them to the top.
Dica: If using disposable cups without holders, freeze for about two hours until slightly firm before inserting the stick in the center and immediately returning to the freezer.
Place the molds in the freezer for 4 to 6 hours, or preferably overnight, until completely frozen.
Dica: If necessary, use scissors to carefully cut away plastic molds.
Prepare the Sensation Popsicle mixture: Blend the sweetened condensed milk, powdered milk (Nido or similar), strawberry powdered drink mix, heavy cream, and milk in a blender until smooth and colored.
Dica: The strawberry powdered drink mix adds color and flavor to the mixture.
Fill disposable cups with the Sensation popsicle mixture, leaving a small space at the top.
Dica: Add chopped fresh strawberries to the cups to taste before freezing.
Freeze the Sensation popsicles for about one hour, until the mixture is firmer.
Dica: After the first hour, insert the popsicle stick into the center and return to the freezer until completely solidified.
Create the magic shell: Melt the coating chocolate in the microwave in 30-second intervals. Add the coconut oil to the melted chocolate.
Dica: Coconut oil helps form the crunchy chocolate coating.
Pour the melted chocolate into a tall cup, then quickly dip the already frozen popsicles into the coating, turning them rapidly so the shell forms.
Dica: The shell should become opaque quickly upon contact with the icy popsicle.
Place the coated popsicles on a surface lined with parchment paper and return them to the freezer to set the coating.
Prepare the Passion Fruit 'Sacolé': Blend the passion fruit pulp with a small portion of milk in the blender until well crushed.
Add the sweetened condensed milk, heavy cream, passion fruit flavored powdered drink mix, neutral stabilizer, and the remaining milk to the blender, blending the mixture completely.
Dica: The neutral stabilizer prevents the formation of ice crystals in the sacolé.
Using a funnel, fill the specialized plastic bags for 'sacolé' with the mixture, aiming for a yield of up to 21 units.
Dica: Be sure not to overfill the bags to make sealing easier.
Tie or seal the 'sacolés' and place them in the freezer until completely solid.
