An innovative recipe for 'frying' chicken drumettes without oil, cooking them first in water and finishing with sautéed okra, which helps eliminate the okra's slime.

Ingredients
- 1kg de Chicken drumettes
- 1teaspoon de Paprika
- 1teaspoon de Saffron Substitute or Turmeric
- 1teaspoon de Oregano
- 1sprig de Rosemary (small sprig)
- 1teaspoon de Salt
- Water
- 3cloves de Garlic
- 1unit de Medium Onion
- to taste de Okra
- 1/3unit de Red Bell Pepper
- 3unit de Cherry Tomatoes (or 1 large tomato)Substitui por: 1 tomate grande
- 200ml de Water (for cooking okra)
- for finishing de Thyme opcionalSubstitui por: Salsinha, Cebolinha, Coentro
Instructions
Season the chicken drumettes with paprika, turmeric, oregano, rosemary, and salt.
Dica: Reserve the amount of seasoning according to 1kg of drumettes.
Place the chicken in a pan and add just enough water to cover the bottom to begin the cooking process.
Dica: If the water evaporates during the initial process, add a little more water.
Cook the chicken in the water for approximately 10 to 15 minutes, turning occasionally, until the water evaporates and the chicken starts to brown.
Dica: Do not add oil even if the water dries up; add just a tiny splash more water if needed.
When the chicken is nicely browned and the water is gone, add the minced garlic and chopped onion to the chicken in the pan.
Dica: Sauté the garlic and onion for about one to two minutes.
Add the okra (to taste), chopped red bell pepper, and halved cherry tomatoes to the pan with the chicken and sautéed aromatics.
Dica: Cooking with the meat juices will help eliminate the sliminess of the okra.
When the okra is dry (not slimy), add about 200 ml of water (or the desired amount for the sauce) and let it simmer until the okra is fully cooked.
Dica: If you prefer a saucier dish, increase the amount of water.
Finish the dish by sprinkling fresh herbs like thyme (with the stem) or green herbs (parsley, scallions, cilantro) over the top.
Dica: Thyme with the stem adds a pleasant aroma to the finished dish.
