Instructions
Clean the chicken thighs, removing excess fat and skin, if desired.
Dica: Removing excess fat and skin will make the chicken look nicer and help control the fat content.
Prepare the marinade by mixing the plain yogurt, oregano, salt (about 2 teaspoons), mashed garlic (about 8 cloves), smoked paprika, and black pepper to taste.
Dica: Taste the marinade to ensure it is properly seasoned, as it needs to adequately flavor the meat.
Add the juice and a little of the zest from the Persian lime to the marinade, mixing well. If marinating overnight, add the lime juice and zest only right before roasting.
Dica: The lime zest adds a special aroma to the marinade.
Season the chicken thighs, ensuring the marinade reaches the inner parts and underneath the skin.
Dica: Wear gloves to thoroughly massage the marinade into the meat.
Let the chicken marinate for at least one hour to absorb the seasoning.
Preheat the oven to 350°F (180°C). Line the bottom of the baking dish with a generous layer of sliced onion to create a base.
Dica: If you want to add potatoes or carrots, cut them and season them along with the chicken, arranging them around the onion base.
Arrange the chicken thighs over the bed of onions in the dish, leaving a small space between them so they brown evenly.
Dica: Avoid overcrowding the chicken to ensure all sides roast and become crispy.
Cover the dish with aluminum foil and bake for 30 minutes to maintain the meat's juiciness.

After 30 minutes, remove the aluminum foil and continue roasting for another 40 to 60 minutes, or until nicely browned. For faster browning, increase the temperature to 400°F (200°C) in the final minutes.

Baste the chicken with the remaining marinade juices that collected in the pan before serving.
