Ingredients
- Pineapple (flesh cut into cubes)
- Sugar
- Water
- 1packet de Pineapple-flavored gelatin
- Sweetened condensed milk
- Coconut milk
- Heavy cream (from a carton)
- Butter or Oil (for greasing the mold)
Instructions
Simmer the pineapple cubes (flesh) with a little sugar and water over low heat.
Dica: Cook until the pineapple is tender, which prevents the dessert from tasting bitter. Simmer for 10 minutes after it starts boiling.
Set aside about one cup of the cooked pineapple with syrup to be used for the final decoration (this step is optional).
Dica: Reserve the portion with more syrup.
While the remaining syrup is still hot, completely dissolve one packet of pineapple-flavored gelatin.
Dica: The heat from the syrup ensures the gelatin dissolves completely, keeping the dessert creamy.
Add the sweetened condensed milk, coconut milk, and heavy cream to the warm mixture and stir well until smooth.
Dica: This step seasons and provides the creamy base for the dessert.
Lightly grease a mold (silicone, oven-safe glass, or aluminum) with oil to make unmolding easier.
Dica: Use oil instead of butter for greasing (if using a silicone mold). The mold used is about 8 inches in diameter.
Pour the entire mixture into the greased mold and refrigerate for approximately 4 hours until firm enough to unmold.

Unmold the dessert onto a serving plate and garnish the center with the reserved pieces of pineapple.
