Recipe Video
Ingredients
- Strawberries
- Sugar
- a little de Water
- Lime juice
- Sweetened condensed milk
- Heavy cream
- Lime (for zest, presumed)
Instructions
Prepare the strawberry base (concentrated juice) by placing cleaned strawberries, sugar, a little water, and lime juice in a blender and blend until smooth.
Fill the popsicle molds with the concentrated strawberry juice, leaving space at the edge for adding the filling.
Dica: Reserve the leftover juice to seal the popsicle later.
Place the molds in the freezer for one to two hours, long enough for the strawberry base to start setting.
Prepare the filling by mixing sweetened condensed milk (plain or with heavy cream, based on preference), lime zest, and lime juice in a bowl, stirring well until a smooth and creamy mixture is obtained.
Dica: Adding heavy cream makes the filling creamier and less intense.
With the popsicle base partially set in the molds, fill the reserved space with the prepared cream filling.
Cover the filling using the reserved concentrated strawberry juice, completing the volume of the mold.
Insert the sticks into the molds and place the Mexican ice pops in the freezer for a period of 4 hours or until completely firm.
Dica: To release the popsicles, briefly dip the mold in a cup of lukewarm water.
