- 1/4cup de Milk (Frosting)
- 1cup de Chocolate Drink Mix (Nesquik) (Frosting)
Instructions
In a stand mixer or bowl, add the three eggs and beat for one minute.
Add one and a half cups of granulated sugar and beat for another minute.
Incorporate one cup of oil (or room temperature butter/margarine) and beat for one more minute.
Dica: You can substitute the oil with butter or margarine in the same proportion.
Add one and a half cups of chocolate drink mix (or half 50% cocoa powder), one tablespoon of baking powder, half a level tablespoon of baking soda, two and a half cups of all-purpose flour, and one and a half cups of room temperature water.
Dica: The baking powder and baking soda should be measured level.
Mix the ingredients until a smooth batter forms and beat for one more minute.
Pour the batter into a 10x10 inch pan (or equivalent 26x26 cm) that is 2.5 inches deep (6 cm), previously greased with butter and floured.
Bake in a preheated oven at 340°F (170°C) if using an electric oven (with top and bottom elements on) or 350°F (180°C) in a conventional oven.
Dica: Baking time is approximately 1 hour, or until a toothpick inserted into the center comes out clean and dry.
While the cake cools slightly, prepare the soaking syrup by mixing two cups of milk with half a cup of chocolate drink mix.
Poke holes into the surface of the still-warm cake so the syrup penetrates well, and drizzle the mixture over it.
Dica: Press down gently after drizzling so the syrup is well absorbed.
Begin the crispy frosting: in a saucepan, combine one cup of granulated sugar, 1/4 cup of butter, 1/4 cup of milk, and one cup of chocolate drink mix.
Dica: Mix the ingredients in the pan before turning on the heat.
Cook over medium heat, stirring continuously until it reaches the consistency of soft fudge (brigadeiro mole), which should take about two minutes after boiling.
Dica: Cook until you achieve a thick glaze, similar to soft fudge.
Spread the hot frosting over the moistened cake and let it cool completely at room temperature to become crunchy.
Dica: The frosting will dry and crackle as it cools, forming the crisp shell.
Serve the cake after the frosting has set.
