Recipe for a cornmeal cake with corn and guava paste, made in a blender, which results in a moist, soft, and delicious cake, eliminating the need for wheat flour.

Ingredients
- 3units de Eggs
- 1/2cup de Milk
- 3/4cup de Oil
- 1can de Canned corn
- 1cup de Granulated sugar
- 1cup de Fine cornmeal
- 1level tablespoon de Baking powder
- 50g de Grated Parmesan cheese
- 1/2cup de Diced guava paste
Instructions
In the blender, add the eggs, milk, oil, canned corn (drained), and granulated sugar.
Blend the liquid ingredients for about 3 minutes until a smooth mixture is obtained.
Transfer the liquid mixture to a bowl.
Add the fine cornmeal and baking powder to the mixture in the bowl.
Mix the batter in the bowl (or use the blender again) for approximately 1 minute to incorporate the dry ingredients.
Pour the batter into a greased baking pan measuring 11 inches by 7 inches by 2 inches high (28 cm by 18 cm and 5 cm of height).
Sprinkle the grated Parmesan cheese and diced guava paste over the top of the batter before baking.
Dica: These extra ingredients are placed on top before baking.
Bake in a preheated oven at 340°F (if using electric with top and bottom heating) or 350°F (if using conventional).
Dica: The cooking time is fast.
Bake for about 35 minutes or until a toothpick inserted into the center comes out clean and dry.
Dica: Check the doneness with a toothpick to ensure the cake is fully baked.
Allow the cake to cool completely before serving.
