Instructions
Place the heavy cream in a saucepan and heat over low heat

Pass the egg yolks through a sieve to remove any membranes

Add the egg yolks to the hot cream and mix well
Add the chocolate and mix until completely melted and smooth
Allow the mixture to cool completely at room temperature
Dica: Do not refrigerate; let it cool naturally at room temperature
Beat the mixture using a stand mixer on low speed
Pour the mixture into a freezer-safe container and place in the freezer for 2 to 3 hours
