Season the cut generously with salt, black pepper, and garlic (run minced garlic all over), don't be shy with the amount of salt.
Dica: Salt liberally without hesitation.
Place the beef hump on the grill grates to sear, grilling for approximately 10 minutes per side, rotating the cut.
Dica: Do not let it brown too quickly.
After the initial searing (about 40 minutes total), remove the beef hump from the direct heat/coals.
Add a source of fat, mixing butter and oil (or the fat source of your choice) over the meat.
Dica: The fat helps maintain moisture.
Wrap the beef hump (presumably in heavy-duty aluminum foil or barbecue wrap) and return it to the grill.
Continue the slow cooking process, flipping the cut every 1.5 hours, for a total of approximately 5 hours on the grill.
Remove the beef hump once it reaches the desired tenderness, confirming that it is browned on the outside and falling apart.
