Brigadeiro recipe made with real ingredients, without chocolate drink mix
Recipe Video
Ingredients
- butter or water opcional
Instructions
Mix the cocoa powder with the milk. If you are using pure cocoa powder, dissolve it completely in the milk over low heat beforehand to prevent clumping.
Dica: Dissolving the cocoa in milk over low heat prevents the brigadeiro from getting lumps.
Add the sweetened condensed milk and butter to the saucepan with the milk and chocolate mixture.
Dica: Using butter (milk fat) instead of margarine contributes to creaminess and prevents the brigadeiro from crystallizing.
Place the mixture over heat and stir continuously for approximately 15 minutes after it starts to boil, without stopping, to ensure creaminess and prevent the bottom from burning or sticking.
Dica: Do not use high heat trying to speed up the process, and choose a suitably sized pan: one too small will take longer, one too large may cause crystallization.
Remove the mixture from the heat when it reaches the desired consistency for rolling.
Let the mixture cool completely before handling and rolling.
Dica: To roll, lightly grease your hands with butter or dampen them with water.
Optionally, if you prefer a 'cleaner' version than industrial sprinkles, roll the brigadeiros in cacao nibs, chocolate shavings, or sprinkles made from real chocolate.
Dica: To check the quality of the coatings, always review the ingredient list on the label.
