Ingredients

  • 1kg de All-purpose flour
  • 500ml de Warm water
  • 18g de Dry active yeast
  • 25g de Granulated sugar
  • 1/4teaspoon de Salt
  • 100g de Butter
  • 500g de Ground top round steak
  • 1/4unit de Green bell pepper
  • 1/2unit de White onion
  • 3units de Tomatoes
  • Fresh parsley
  • 1tablespoon de Tahini
  • 1/2unit de Lime juice
  • Ground cumin
  • Ground black pepper
  • Ground white pepper
  • White sesame seeds
  • 100g de Queso Fresco (or similar mild, crumbly white cheese)
  • 250g de Fresh ricotta cheese
  • 60g de Mozzarella cheese opcional
  • 1tablespoon de Heavy cream
  • 1unit de Egg
  • Dried mint
  • Black sesame seeds

Instructions

Mix the warm water with half of the flour and the dry active yeast.

Add the sugar and mix until an elastic batter forms.

Add the butter and salt, and mix until it reaches the consistency of pancake batter.

Add the remaining flour and mix until a smooth dough is obtained.

Cover the dough and let it rise for 20 minutes.

Prepare the meat and cheese fillings.

Roll out the dough and cut into round shapes.

Place the filling in the center of the disk and close the edges into 3 points, forming a triangle shape.

Brush the tops of the sfeeha with a beaten egg yolk.

Bake in a preheated oven at 220 degrees (about 425°F) for 15 minutes.
