A pork loin and pineapple recipe for the New Year, using the pineapple rind for tenderizing the meat.

Ingredients
- 1200g de Pork loin roast
- 250g de Bacon
- 1unit de Pineapple
- 3cloves de Garlic
- 1unit de Onion
- 1bunch de Fresh herbs (Cilantro/Parsley mix)
- 2tablespoons de Salt
- Black pepper
- 1liter de Water
- 1tablespoon de Starch (e.g., Cornstarch)
Instructions
Peel the pineapple and slice it into half-moons
Prepare the marinade by blending the pineapple rinds with the other ingredients in a blender
Slice the pork loin into chops/steaks. Place in a zip-top bag or container with a lid, cover with the marinade, and let marinate for 30 minutes
Arrange the pork chops, pineapple slices, and bacon in a baking dish and pour one ladleful of the marinade over the top
Bake in a preheated oven at 200°C (about 400°F) for 30 minutes
Remove from the oven, drain the excess liquid, and transfer the liquid to a saucepan over medium heat to reduce until thickened
