A recipe for golden butter to make your holiday poultry unforgettable, accompanied by toasted cassava flour with banana pieces.

Ingredients
- 1whole de Holiday poultry (e.g., turkey or chicken)
- 200g de Butter
- 1whole de Onion
- 4cloves de Garlic
- 1whole de Carrot
- 2tablespoons de Mustard
- 1sprig de Rosemary
- 1leaf de Bay leaf
- 2oranges de Orange juice
- Black pepper
- 1tablespoon de Salt
Instructions
Melt the butter over low heat until the foam is removed.
Strain the melted butter through a sieve to obtain clarified butter.
Blend the clarified butter with the remaining ingredients, except for the poultry, in a blender.
Gently loosen the skin of the holiday poultry and spread the butter mixture all over the bird.
Place the poultry in a clean bag, tie it shut, and let it marinate in the refrigerator for at least 12 hours.
Roast the poultry on an oven-safe tray, cover it with aluminum foil, and bake for one hour at 200°C (392°F).
Remove the aluminum foil and allow the poultry to brown for approximately 30 minutes.
