A recipe for repurposing leftover turkey into a delicious baked rice casserole.

Ingredients
- 3tablespoon de Olive oil
- 1whole de Onion
- 2cloves de Garlic
- 3cup de Shredded turkeySubstitui por: frango desfiado
- 2tablespoon de Tomato paste
- 1/2cup de White wine opcionalSubstitui por: caldo de galinha
- 1sprig de Thyme sprig opcionalSubstitui por: alecrim, orégano
- Salt
- Black pepper
- 3cup de Cooked white rice
- 1can de Corn opcional
- 1can de Peas opcional
- 1whole de Shredded carrot
- 1/2cup de Biquinho peppers opcionalSubstitui por: tomate cereja
- 200grams de Cream cheese
- to taste de Chopped parsley opcionalSubstitui por: cebolinha
- 5tablespoon de Grated Parmesan cheese
- 3units de Cooked and mashed potatoes
- 2tablespoon de Butter
- 1cup de Heavy cream
- Salt
- Black pepper
- 1/2cup de Grated Parmesan cheese
Instructions
Sauté the onion and garlic in the olive oil.
Add the shredded turkey, tomato paste, and white wine. Cook for a few minutes.
Add the thyme, salt, and black pepper.
Add the cooked rice, corn, peas, shredded carrot, Biquinho peppers, cream cheese, and parsley. Mix everything.
Prepare the mash: mash the cooked potatoes with the butter, heavy cream, salt, pepper, and Parmesan cheese.
In a baking dish, layer the turkey rice mixture and top with the mashed potato layer.
Sprinkle with grated Parmesan cheese.
Bake in a preheated oven at 350°F (180°C) for 30 minutes or until golden brown.
