Recipe for mini raindrop fritters made with a special technique using a rack, ideal to accompany coffee.

Ingredients
- 2unit de Eggs
- 1/2cup de Sugar
- 1teaspoon de Salt
- 1/2cup de Milk
- 2cups de All-purpose flourSubstitui por: farinha de arroz
- 1teaspoon de Baking powder
- Oil
- a little de Granulated sugar
- a little de Ground cinnamon
Instructions
In a bowl, crack the two eggs.
Add half a cup of sugar and one teaspoon of salt to the mixture, and whisk well until combined.
Add half a cup of milk and mix again until smooth.
Gradually incorporate two cups of all-purpose flour, mixing until the batter reaches the desired consistency (fritter batter).
Add one teaspoon of baking powder to the batter.
Transfer all the batter to a pastry bag.
Heat the oil in a deep frying pan and prepare a wire rack above it (the rack should already be lightly greased with hot oil).
Dica: The rack is used to shape the fritters directly during frying.
Squeeze the batter from the pastry bag over the rack, allowing the small balls of dough to fall into the hot oil, forming the desired shape.
In a separate container, mix granulated sugar and ground cinnamon.
Remove the fried fritters from the oil and immediately toss them in the sugar and cinnamon mixture.
