Ingredients
- Roasted peanuts
- 1tablespoon de 50% Cacao dark chocolate
- 1cup de Sugar
- 1cup de Chocolate drink mix (like Nesquik)
- 1/2cup de Strong brewed coffee
- handful de Peanuts (for coating)
- Sugar (for rolling)
Instructions
Grind the roasted peanuts using a food processor or blender until a coarse meal forms. Remove the skins if necessary.
Dica: Set aside a handful of the ground peanut meal to use for the final coating.
Sift the resulting peanut meal to remove any overly large pieces.
In a bowl, combine the sifted peanut meal with the 50% cacao dark chocolate, one cup of sugar, and one cup of the chocolate drink mix.
Gradually add the unsweetened strong coffee, mixing continuously until the dough reaches the ideal consistency for rolling.
Dica: Add the coffee slowly, as the mixture absorbs rapidly and can become too soft.
Shape the dough into small Cajuzinho balls (little cashew shapes).
Lightly flatten each ball, roll it in the reserved sugar, and finally, press the surface onto the reserved ground peanuts for the characteristic finish.
Dica: The peanut coating gives the candy its signature look.
