Ingredients
- 1cup de Sugar
- 1can/box de Sweetened condensed milk
- 2cups de Roasted peanuts
- 1tablespoon de Margarine
- Cocoa powder or chocolate drink mix opcional
- Sugar (for coating)
Instructions
In a saucepan, melt the sugar over low heat, without stirring initially, until it begins to caramelize and turns a light golden color.
Dica: You don't need to stir at the beginning; just watch the color.
After the sugar has caramelized, stir the sugar and add the margarine, followed by the can/box of sweetened condensed milk.
Dica: The sugar might harden slightly when the cold ingredients are added, but it will continue to melt.
If desired, add a small amount of cocoa powder or chocolate drink mix to darken the candy.
Add the two cups of roasted peanuts to the mixture.
Dica: Using extra peanuts won't fundamentally change the recipe; you can use 350g instead of 2 cups if you prefer.
Cook the mixture, stirring constantly, until it reaches the brigadeiro consistency—meaning it pulls away cleanly from the bottom and sides of the pan.
Dica: The process is fast, especially because it starts with cold ingredients.
Turn off the heat and continue stirring the mixture for a few more moments.
Transfer the candy mixture to a greased pan (or one lined with parchment paper) and spread it evenly.
Dica: Parchment paper helps prevent sticking, but greasing the pan is also sufficient.
Let the peanut candy cool completely. You can place it in the refrigerator to speed up the process.
Dica: Cooling is essential for the candy to firm up enough for cutting.
After it has cooled and firmed up, turn it out (unmold), remove the paper (if used), and cut it into uniform squares or pieces. Finish by rolling the pieces in sugar, if desired.
Dica: Rolling in sugar gives it the characteristic finish and prevents the pieces from sticking together.
