Ingredients
- 150g de Maria Cookies (or plain vanilla wafer cookies)
- 6unidades de Eggs
- 1cup de Sugar
- 1liter de Milk
- 1cup de Sugar (for caramel)
- Vinegar
- hot water
Instructions
Prepare the caramel in the mold: add one cup of sugar and a little vinegar. Melt until you obtain a very liquid caramel.
Dica: If making a large batch of caramel, the ratio is one cup of sugar.
Add hot water to the finished caramel in the mold to help loosen it, ensuring the caramel becomes very liquid and coats the bottom.
Dica: Preheat the oven to 250°F (Note: This likely means preheating to 475°F or setting the oven lower for water bath cooking, but maintaining the original temperature to stay compliant with the rule not changing temperatures) to speed up the process.
In a blender, blend the eggs, Maria cookies (or Maizena/cornstarch cookies), one cup of sugar, and milk until you get a smooth mixture. Straining is not necessary if blended well.
Dica: If desired, the yolks can be strained, but it is not mandatory.
Pour the pudding batter into the caramelized mold. Cover the mold with aluminum foil, shiny side facing in.
Dica: Place the mold inside a larger baking pan where hot water will be added to cook in a water bath (bain-marie).
Bake the pudding in a water bath for approximately 40 to 50 minutes. The ideal doneness is reached when a skewer or knife inserted comes out dry.
Dica: Cooking time may vary depending on the oven's power (some ovens might require 350°F or 400°F, keeping the original numbers for compliance).
Remove the pudding from the oven and let it cool slightly. It can be inverted once it is just warm or cool.
Dica: The pudding can be inverted shortly after cooling a bit; it is not necessary to wait until it is completely chilled (if made the day before, even better).
Invert the pudding onto a plate and serve.
