Ingredients
- 1cup de Sugar (for caramel)
- 6 de Egg whites
- 9tablespoons de Sugar (for meringue)
- 1 de Lemon (zest) opcional
- 1little de Vinegar
Instructions
Caramelize a pudding mold using one cup of sugar, spreading the caramel over the entire surface.
Beat the six egg whites until stiff peaks form in the mixer.
Add the nine tablespoons of sugar to the stiff egg whites and continue beating the mixture.
Gently fold in the zest of one lemon to the meringue and beat briefly just to combine.
Carefully transfer the meringue to the caramelized mold, gently settling it so it fills the space.
Dica: The pudding will rise significantly in the oven but will deflate as it cools.
Prepare a water bath by placing water in a baking dish larger than the pudding mold.
Add a splash of vinegar to the water bath to prevent the mold from darkening during baking.
Dica: The vinegar helps keep the pan from turning black in the oven.
Bake the pudding in the water bath at 350ºF (180ºC) for approximately 1 hour.
After turning off the oven, let the pudding cool slightly before unmolding to ensure it sets properly.
Dica: It can be removed from the oven when it is just slightly warm.
Unmold the reserved pudding, observing its appearance, and serve.
Dica: The final texture is compared to a meringue kiss, melting in your mouth.
