Recipe for a delicious and unexpected Stroganoff made with chickpeas, following a special preparation method for the chickpeas to cook correctly.

Ingredients
- 1/2kg de Chickpeas
- 1tablespoon de Vinegar
- ButterSubstitui por: azeite
- 1unit de Onion
- 1/2packet de Tomato sauce
- 2tablespoons de Mustard
- 1tablespoon de Salt
- to taste de Pepper opcional
- Heavy cream
- 1serving spoon de White rice
- to taste de Shoestring potatoes
Instructions
Soak the chickpeas for a minimum of 8 hours, changing the water three times, adding one tablespoon of vinegar to the new water each time.
Dica: Changing the water with vinegar three times is crucial for the final result.
Drain the soaking water and place the chickpeas in a pot, adding water until it covers them by about one inch.
Cook the chickpeas over low heat for 5 minutes without the pressure cooker lid, while skimming off any foam that forms.
Dica: It is normal for foam to form, and it should be removed.
Rinse the chickpeas well and return them to the pot, covering them again with about one inch of water.
Place the pot under pressure and, as soon as it comes to a boil (reaches pressure), immediately turn off the heat.
Dica: The ideal doneness for the chickpeas is cooked, but still firm ('al dente').
Drain the cooked chickpeas. You can freeze half of them if you don't use them all at once.
Dica: The ready chickpeas should be tender, yet firm (al dente).
In a pan, melt the butter and sauté the finely chopped onion until very soft.
Dica: Chopping the onion very finely helps it blend in better.
Add all the cooked chickpeas to the sautéed onions.
Add almost the entire packet of tomato sauce and the two tablespoons of mustard.
Season with one tablespoon of salt and a little pepper, letting the mixture simmer.
Dica: Taste and adjust salt if necessary.
Incorporate the heavy cream to finish the Chickpea Stroganoff, mixing well until you reach the desired consistency.
Dica: If you like it more seasoned, add more spices at this point.
Serve the Stroganoff alongside a portion of white rice and finish by sprinkling shoestring potatoes over the top.
