Ingredients

- Yuca (Cassava)
- Onion
- Garlic
- Tomato
- Bode pepper (or similar hot pepper)
- Aromatic pepper (or mild chili)
- Smoked paprika
- Cumin seeds
- BreadcrumbsSubstitui por: farinha de trigo
- Oil
- Salt
- Black pepper
- Chopped cilantro
- Cassava flourSubstitui por: farinha de trigo
- Egg
- Panko breadcrumbs
Instructions
Cut the short ribs into smaller pieces
Season the short ribs with salt and black pepper and let rest for one hour
Cook the short ribs in a pan with oil until browned
Add chopped onion and minced garlic to the pan and sauté until browned
Add tomato, the hot pepper, and the aromatic pepper to the pan and cook until soft
Add smoked paprika, cumin seeds, and chopped raw yuca to the pan
Transfer the mixture to a pressure cooker and cook for 40 minutes
Separate the meat and the yuca, and process the yuca until it forms a paste
Mix the shredded meat with the yuca paste and add chopped cilantro and cassava flour
Shape the croquettes and dredge them in all-purpose flour, beaten egg, and panko breadcrumbs
Fry the croquettes until golden brown
