A colorful and appetizing codfish bake with smashed potatoes, ideal for a special family lunch.

Ingredients
- Salt cod (desalted and thawed)
- 1clove de Garlic
- 1sprig de Rosemary
- 1leaf de Bay leaf
- Mini potatoes
- Broccoli
- Salt
- Black pepper
- Olive oil
- Red onion
- Cherry tomatoes
- Garlic (sliced)
- Paprika
- Hard-boiled eggs
- Purple olives (pitted)
Instructions
Cut the salt cod (already desalted and thawed) in half, removing the central bone to create portions.
Dica: Use each filet to form two portions.
In a pot, heat water adding garlic, rosemary, and bay leaf. Once boiling, place the pieces of cod to cook for only three minutes, as the preparation will be finished in the oven.
Dica: The initial cooking is quick, taking advantage of the added aromas in the water.
Remove the miniature potatoes and cook them in the same flavorful cod broth, adding a little salt, for about 15 minutes.
Dica: Be careful to keep the potatoes cooked but still firm.
Season the cooked cod with salt and black pepper. During the last two minutes of the potatoes cooking time, add the broccoli and cook it quickly.
Dica: After quickly blanching the broccoli, immediately immerse it in ice water to maintain its vibrant green color.
Remove the cooked potatoes and, using a plate or the palm of your hand, gently crush them slightly—this is the 'smashed potato' technique (batatas ao murro).
Dica: Perform this step while the potatoes are still warm.
Preheat the oven to 400°F (200°C). Arrange the smashed potatoes in a baking dish.
Dica: Drizzle generously with olive oil over the potatoes to add moisture and flavor.
Arrange the cod pieces, broccoli, slices or chunks of red onion, and cherry tomatoes over the potatoes in the baking dish.
Dica: The dish should look very colorful and appetizing.
Spread sliced garlic, sprinkle paprika, adjust salt and black pepper over all the ingredients, and finish by drizzling plenty of olive oil for aroma.
Dica: Adding an extra sprig of rosemary at this stage helps intensify the aroma.
Place the baking dish in the preheated oven at 400°F (200°C) to bake for 20 minutes.
Remove the cod bake from the oven and finish the dish by distributing chopped hard-boiled eggs and pitted purple olives on top.
Dica: The arrangement of the final ingredients is 'free style,' focusing on the beauty and flavor of the quality ingredients.
