Ingredients
- Bittersweet chocolate
- Butter
- Egg yolks
- Sugar
- Vanilla
- All-purpose flour
- Egg whites
- 1pinch de Salt
- Cocoa powder
- Vanilla ice cream opcional
Instructions
Melt the bittersweet chocolate and butter together, using a double boiler (heating water and placing the bowl with the ingredients over it) or in the microwave.
Dica: If using a double boiler, ensure the chocolate and butter are well combined and glossy.
In a separate bowl, beat the egg yolks with the sugar and the vanilla until you get a pale cream.
Dica: Beating well helps aerate the batter.
Sift the all-purpose flour over the egg yolk mixture and mix delicately.
Dica: Sifting the flour guarantees a lighter and fluffier batter.
Incorporate the melted chocolate and butter mixture into the batter, mixing until smooth.
Whip the egg whites with a pinch of salt until they form soft peaks, avoiding making them too stiff or dry.
Dica: The ideal consistency for the egg whites is soft enough to fold into the batter without deflating it.
Add the whipped egg whites to the chocolate batter, gently folding them in to maintain the air in the mixture.
Dica: Add the egg whites in stages, mixing carefully so as not to deflate the batter.
Grease a baking dish with butter and dust it with cocoa powder.
Dica: Using a porcelain baking dish may result in different cooking results than a metal pan.
Pour the batter into the prepared baking dish.
Bake in a preheated oven at 350°F (180°C) for about 20 to 30 minutes, watching carefully so the center remains gooey.
Dica: Baking time can vary. The correct stage is when a crust forms and the center is still soft.
Remove from the oven and let the dessert rest for approximately 5 minutes before serving hot with vanilla ice cream, if desired.
Dica: Serve immediately after resting to ensure the lava cake texture.
