Ingredients
- Boneless, skinless chicken breasts
- Lemon juice
- Salt
- Paprika
- Garlic
- drizzle de Olive oil
- Onion
- Leek
- Chicken broth
- Diced tomatoes
- Tomato puree
- Orzo pasta (risoni)
- Hot water
- Black pepper
- Parsley
- small handfuls de Spinach leaves
- Heavy cream
- Butter
- Parmesan cheese
Instructions
Cut the chicken breast into strips and season with lemon juice, salt, paprika, garlic, and a drizzle of olive oil. Mix well with your hands to coat the chicken evenly.
Heat a skillet and sear the chicken over high heat. Once browned, remove the chicken and set aside.
Dica: Searing the chicken adds more flavor to the dish.
In the same skillet containing the chicken residue (fond), add more olive oil and sauté the onion and leek.
Dica: Building this fond in the pan adds excellent flavor to the orzo.
Add the diced tomatoes and chicken broth to the sautéed vegetables.
Add the orzo, tomato puree, and hot water. Season with black pepper and remaining salt.
Dica: You can cook the orzo separately in water, but the most practical way is to cook it directly in the broth.
Cook the orzo over low heat until it reaches the right consistency, absorbing most of the liquid. Reduce the heat.
Incorporate the spinach leaves, heavy cream, butter, and Parmesan cheese, stirring until creamy.
Dica: The butter will add extra creaminess to the dish.
Return the seared chicken to the pan with the creamy orzo, mix, and finish with chopped parsley and a drizzle of olive oil.
Dica: Parsley adds a special touch of freshness.
