A unique tapioca recipe that results in crispy bites prepared in the air fryer.

Ingredients
- 3units de eggs
- 3tablespoons de cream cheese
- 1pinch de salt
- 10tablespoons de hydrated tapioca starch
- 4tablespoons de grated Parmesan cheese
- drizzle de olive oil
Instructions
In a bowl, combine the three eggs and the three tablespoons of cream cheese, adding a pinch of salt.
Incorporate the 10 tablespoons of hydrated tapioca starch and the 4 tablespoons of grated Parmesan cheese into the mixture, stirring well until the batter is smooth and very liquid.
Dica: If desired, use another cheese of your choice instead of Parmesan.
Heat a non-stick skillet with a drizzle of olive oil and pour in half of the batter, spreading it out as if making a pancake or savory crepe.
Cook the batter until the surface dries on the bottom, and then flip to brown the other side, repeating the process with the remaining batter.
Transfer the cooked tapioca discs to a cutting board and cut them into small square pieces.
Place the tapioca squares in the air fryer basket and bake for 5 to 10 minutes, or until they puff up and become crispy.
Dica: The ideal stage is when the pieces are visibly swollen and crispier.
Serve the tapioca pillow pieces immediately.
