Recipe for creamy pasta topped with a rich cheese fondue sauce, finished with fresh green onions.

Ingredients
- drizzle de Olive oil
- 3cloves de Garlic
- 2cups de Milk
- 200g de Mozzarella
- 100g de Gorgonzola
- 1container de Cream cheese
- 50g de Grated Parmesan
- Salt
- Crushed red pepper flakes
- 2cartons de Heavy cream
- Chopped green onion (scallions)
- Pasta (tri-color rotini, spaghetti, fusilli, tagliatelle, etc.)
Instructions
In a saucepan, heat a drizzle of olive oil and sauté the three minced cloves of garlic until fragrant.
Add the milk, chopped mozzarella, gorgonzola, cream cheese, and grated Parmesan to the saucepan.
Stir all ingredients over low heat, allowing the cheeses to melt slowly and the sauce to incorporate.
Season the sauce with salt and crushed red pepper flakes, adding salt gradually and tasting, due to the saltiness of the cheeses.
Dica: Be careful not to over-salt the sauce; add salt sparingly and taste as you go.
When the cheese sauce has almost completely melted, stir in the two cartons of heavy cream until well combined.
Finish the sauce by stirring in the chopped green onions.
Fold the cooked pasta (prepared according to your preference) into the cheese fondue sauce.
Dica: The cooking method and preparation of the pasta (drained or not, with or without oil) are up to the cook's discretion.
Serve the fondue pasta immediately.
