A classic and easy potato salad recipe, ideal for barbecues, using few ingredients and being budget-friendly.

- 1pinch de Salt
- 1/2smaller pinch de Sugar

- Green onion (scallion) opcional
Instructions
Peel the potatoes and cut them into very small cubes.
Dica: Using a vegetable peeler is more practical and faster.
Place the cut potatoes in a pot with water and add a pinch of salt. Cook along with the two eggs until the potato is tender when pierced with a fork.
Dica: Test the tenderness of the potato with a fork; cooking is done when it slides in easily.
Remove the potatoes and eggs from the water. Peel the eggs and allow the potatoes to cool completely, preferably in the refrigerator.
Dica: The potatoes must be cold before seasoning.
While the potatoes are cooling, peel the carrot(s) and grate it using the coarse side of the grater, keeping it raw.
Dica: The raw grated carrot adds color and flavor to the salad.
In a bowl, place the cold potatoes and add the grated carrot. Mix lightly to combine.
Add the mayonnaise (about 4 heaping tablespoons), the yellow mustard (1 tablespoon), a pinch of salt, a smaller pinch of sugar, and a pinch of cumin.
Dica: Yellow mustard and cumin are key ingredients for a distinctive flavor.
Chop a bunch of parsley (and optionally green onion/scallion) and incorporate it into the mixture.
Dica: Parsley and green onions add a touch of freshness.
Chop the hard-boiled eggs and add them to the salad last.
Dica: Adding the egg last prevents it from completely falling apart when mixing.
Gently mix all the ingredients until well combined, ensuring the pieces of egg remain visible.
