Instructions
In a saucepan, combine the water, a portion of lard (or butter/oil), and the sugar, heating until the solids are completely dissolved.
Add a pinch of salt to the mixture and then incorporate the 200 grams of all-purpose flour, stirring until you achieve a smooth and cohesive dough.
Remove the saucepan from the heat and add the egg, stirring vigorously so that it is fully incorporated into the dough, preventing it from cooking due to residual heat.
Dica: It is crucial to remove the dough from the heat before adding the egg to ensure it doesn't cook.
Knead the dough by hand until it is smooth and well-combined. Then, place it in a piping bag or use your hands to form logs, cutting and shaping them into a 'bow-tie' or screw shape for frying.
Dica: The shape can be kept straight if preferred; it will still result in great churros.
Heat the oil in a pot until it reaches 350°F (the ideal frying temperature). Fry the shaped churros until they are lightly golden brown.
Dica: Use hot oil at 350°F for proper frying.
Remove the churros from the oil, allowing the excess grease to drain off.
Toss the fried churros in a mixture of sugar and ground cinnamon until they are completely coated.
