Instructions
Roll out the savory roll dough very thin, according to the base recipe (available on the author's YouTube channel).
Dica: The dough should be rolled out as thin as possible.
Spread a generous layer of mozzarella cheese over the rolled-out dough.
Optionally, sprinkle some oregano over the cheese.
Dica: Oregano adds an extra flavor.
Add slices of green olives, if you wish to use them.
Dica: Olives are an optional ingredient.
Distribute the Calabresa sausage (which the author suggests lightly pre-frying) evenly over the fillings.
Dica: Pre-frying the Calabresa beforehand can improve the final flavor.
Roll the filled dough up like a jelly roll, keeping your hands light so as not to compress or crush the dough.
Dica: Roll gently, without pressing down on the filling.
Transfer the rolled dough to a large baking pan, preferably a Bundt-style pan. If that's not possible, you can bake it straight.
Allow the dough to rest and rise in a warm spot for about one to two hours, or until doubled in size.
Dica: Rising time depends on the ambient temperature.
Brush the surface of the risen savory roll with the beaten egg yolk.
Bake the savory roll in a preheated oven at 250°C.
