Instructions
In a bowl, combine the ground pork with the grated ginger, minced garlic, white parts of the scallions, toasted sesame oil, soy sauce, baking soda, and black pepper.
Dica: Grating fresh ginger intensifies the flavor.
Add the pork stock (or chosen broth) to the meat mixture. Mix well until all the liquid is absorbed, ensuring a juicy filling.
Dica: If you don't use broth, use water.
Prepare the steamer: place a small amount of water in the larger pot and line it with a dish towel dampened with hot water.
Dica: The cloth prevents the baking dish from sticking and helps create even steam.
In an oven-safe dish that fits inside the pot, begin assembling the lasagna: cover the bottom with a layer of wonton wrappers.
Alternate the layers, placing a portion of the seasoned meat over the wonton wrappers, and repeat the process until the top, finishing with a layer of wrappers.
Dica: The portioning can be individual or a larger casserole style.
Place the assembled dish onto the cloth inside the larger pot. Cover the pot tightly and set over heat to steam cook.
Dica: Cooking should be slow to reach the ideal temperature in the center (around 165°F/75°C).
Steam the wonton lasagna for approximately 1 hour, or until completely cooked in the center.
