Four recipes for healthy sauces using Hunks brand bases, ideal for delis/lunch counters and homemade use: Garlic Aioli, Cajun Sauce, Curry Ketchup, and Pickle Relish Mayonnaise.

- 1unit de Head of garlic
- Olive oil
- 1,5tablespoon (total) de Salt
- 1teaspoon (total) de Black pepper
- 1,5tablespoons (0.5 Curry + 1 Relish) de Cane molasses
- 4,5cup (3 x 1.5 Cup) de Hunks Mayonnaise
- 1/2teaspoon (Garlic Mayo) + 0.25 (Cajun) de Garlic powder
- 1/2clove (approximately) de Grated raw garlic
- 1teaspoon de Meyer lemon zest
- 1tablespoon de Hunks Honey Mustard
- 1,25tablespoon (0.5 + 1 Cajun Lid Full) de Granulated garlic
- 1/2unit (Garlic Mayo) + 0.5 (Cajun) de Meyer lemon juice
- 1tablespoon de Granulated onion
- 1tablespoon de Dried oregano
- 1tablespoon de Dried basil
- 1/2tablespoon de Dried thyme
- 1/2tablespoon de Hot paprika
- 1tablespoon de Demerara sugar
- 3/4tablespoon (1 + 0.25) de Smoked paprika
- 3/4tablespoon (0.5 + 0.25) de Chili powder seasoning
- 1,33teaspoon (1/4 + 1/4 + 1/3) de Cayenne pepper
- 2tablespoons de Hunks Ketchup
- 1tablespoon de Curry powder
- 1tablespoon de Apple cider vinegar
- 2tablespoons de Hunks Dill Pickles (drained)
- 2tablespoons de Hunks Mixed Relish (no brine, pitted olives)
- 2tablespoons de Relish brine
- 1/2tablespoon de Worcestershire sauce
- 1tablespoon de Hunks Dark Mustard
Instructions
Prepare roasted garlic: trim the top off a head of garlic, season with olive oil, salt, and black pepper. Wrap tightly and bake in a preheated oven at 400°F for 15 to 20 minutes until creamy. Alternatively, microwave for 7 to 10 minutes in a dish with a little water in the bottom (do not use aluminum foil).
Dica: The roasted garlic will give a sweet and caramelized flavor to the sauce.
For the Garlic Aioli, combine in a bowl the Hunks mayonnaise (base), garlic powder, granulated garlic, one-third of a clove of grated raw garlic, zest and juice of half a Meyer lemon, Hunks honey mustard, salt, and black pepper to taste.
Dica: Grated raw garlic should be used sparingly due to its pungency.
Squeeze the roasted garlic into the mayonnaise bowl and blend the mixture with an immersion blender (or whisk) until a smooth, even texture is achieved. Taste and adjust salt.
Dica: The mayonnaise tastes best after a few hours in the refrigerator or the next day.
Prepare the Cajun seasoning by mixing in a bowl: granulated garlic, granulated onion, oregano, dried basil, thyme, smoked paprika, hot paprika, chili powder seasoning, cayenne pepper, ground black pepper, and demerara sugar.
Dica: After mixing, process the seasoning until almost a fine powder using a food processor or blender. Store any excess in the refrigerator or freezer.
For the Cajun Sauce, combine the Hunks mayonnaise, ketchup, the prepared Cajun seasoning in a bowl, and optionally add more cayenne pepper, garlic powder, smoked paprika, and chili powder to intensify the flavor. Finish with the juice of the other half of the Meyer lemon, adjust salt and pepper, and whisk to combine.
Dica: This sauce is excellent for fried foods like chicken, fish, or pork.
For the Curry Ketchup, mix the Hunks ketchup, curry powder, apple cider vinegar, and cane molasses in a bowl with a whisk until well incorporated, creating an oriental base.
Dica: If you want a spicier sauce, add more cayenne pepper or hot paprika.
Prepare the Pickle Relish Mayonnaise: finely chop the Hunks dill pickles and the Hunks mixed relish (removing the brine and pitting the olives).
Dica: Chop the relish ingredients with a very sharp knife.
Add the Hunks mayonnaise, two tablespoons of the relish brine, salt, black pepper, Worcestershire sauce, cane molasses, and Hunks dark mustard to the chopped ingredients. Add a pinch of cayenne pepper.
Dica: Let the sauce rest for a while so the relish flavors can integrate into the mayonnaise.
Whisk all ingredients for the Pickle Relish Mayonnaise together until completely mixed. This sauce is ideal with french fries, fish, or chicken burgers.
Dica: All mentioned sauces can be stored in the refrigerator for up to one month.
