A healthy pancake recipe made with cooked cassava and cheese, prepared in a skillet, and garnished with chives.

Ingredients
- 250g de Cassava (Yuca)
- 150g de Mozzarella cheese
- 5cloves de Garlic
- as needed de Oil
- to taste de Salt
- to taste de Chives
Instructions
Cook the cassava in a pressure cooker until very tender.
Dica: If the cassava does not get very soft, it's okay, as it will be grated or mashed later.
In a skillet, add a little oil and fry four to six cloves of garlic until golden brown.
Dica: The amount of garlic can be adjusted according to preference.
Remove the garlic from the skillet and discard any excess fat.
Dica: Removing excess fat helps keep the recipe healthier.
Transfer the cooked cassava to a bowl and add about 150g of your preferred cheese (mozzarella is suggested).
Incorporate the fried garlic into the cassava and cheese mixture, mashing vigorously until you achieve a homogeneous dough that can be formed into patties.
Add salt to taste to the mashed dough.
Shape the dough into pancake form and place it in the same skillet (now hot) to toast on both sides until golden brown.
Dica: It is important that the skillet is very hot to toast correctly.
Remove the pancake from the skillet and finish by sprinkling with chopped chives.
