Ingredients
- 2kg de Chicken (thighs and drumsticks)
- 2cloves de Garlic
- 1teaspoon de Lemon pepper
- 1teaspoon de Paprika (sweet, hot, or smoked)
- Black pepper
- 1slightly rounded tablespoon de Salt
- 1kg de Onion
Instructions
Season the chicken pieces (thighs and drumsticks), keeping the skin on, with minced garlic, lemon pepper, paprika, black pepper, and salt.
Dica: Massage the seasoning deep into the chicken, even under the skin, so the flavor penetrates completely.
Let the chicken marinate in the seasoning for 20 to 30 minutes.
Dica: Marinating ensures the chicken is flavorful before it goes into the oven.
While the chicken marinates, prepare the base. Roughly chop about 1 kg of onion into thick rings or wedges.
Dica: The onion will form the base layer, releasing moisture and flavor as it melts during cooking.
Spread the chopped onions, without adding any seasoning, on the bottom of a glass baking dish or roasting pan.
Dica: The onions should form a generous layer in the dish.
Arrange the seasoned chicken pieces on top of the bed of onions, ensuring the skin faces upward.
Dica: Do not cover the chicken with aluminum foil.
Place the chicken in a preheated oven at 350ºF (180ºC) to roast.
Dica: Cooking time can vary depending on the oven, but the suggestion is 1 hour and 30 minutes for it to be juicy and have crispy skin.
Remove from the oven and serve the chicken immediately with the caramelized onions.
Dica: Check the tenderness of the meat; the chicken should pull easily from the bone.
