- 2large unit de Potato
- 2medium unit de Carrot
- 1unit de Whole smoked chicken
- 1large unit de Green apple
- 50g de Chopped olives
- 4tablespoon (or 3 serving spoons) de Raisins
- 3heaping serving spoon de Mayonnaise
- 1small carton de Heavy cream
- to taste de Salt opcional
- Lemon opcional
- Shoestring potatoes (for topping)
Instructions
Roughly chop the potatoes and carrots and cook them in enough water to cover them until they are very tender.
Dica: Chopping the vegetables roughly helps them cook faster.
While the vegetables cook, debone and skin the smoked chicken, separating the meat into manageable pieces.
Dica: The skin comes off easily, which simplifies preparation.
Shred all the smoked chicken meat, leaving some pieces slightly larger to better taste the flavor in the salad.
Dica: This chicken should not be blended; it needs to be shredded by hand.
While the vegetables are still hot, mash the potato and carrot. It is crucial to mash them while hot to prevent lumps from forming.
Dica: If they cool down, the mash can become lumpy.
Peel the green apple and chop it into very small, uniform pieces to ensure crunchiness; avoid grating it.
Dica: If not using immediately, brush the chopped apple with a little lemon juice to prevent browning.
In a large bowl, combine the shredded chicken, chopped apple, and mashed potato and carrot.
Add the chopped olives and raisins (about 4 tablespoons) to the mixture.
Incorporate 3 very generous serving spoons of mayonnaise and one small carton of heavy cream into the bowl.
Dica: Do not add too much salt initially, as the olives and smoked chicken are already salty.
Mix all ingredients until you achieve a uniform consistency. Taste and add a pinch of salt, if necessary, adjusting the seasoning to your liking.
