Mix the pure chocolate and the compound coating chocolate in the indicated ratio to achieve the creamy ganache.
Dica: The mentioned ratio is half pure chocolate and half compound coating chocolate.
Immediately apply a very thin layer of the ganache over the cake to seal the crumbs.
Dica: Use a piping bag to facilitate application, as the ganache hardens quickly.
Spread the remaining ganache around the sides of the cake, working quickly.
Dica: You can apply the ganache directly with the piping bag.
Smooth the top surface of the ganache first.
Using an offset spatula positioned at a 45-degree angle, smooth the sides of the cake, removing excess from the top.
Use the spatula or a spoon to create textured decorations on the ganache, if desired.
Dica: You can use tip 1M immediately after application for decoration.
Place the cake in the refrigerator for 5 minutes to allow the ganache to set completely.
Dica: After 5 minutes in the refrigerator, the ganache will be super firm.
