Ingredients
- 340g de All-purpose flour (without leavening agent)
- 130g de Confectioners' sugarSubstitui por: açúcar refinado
- 2 de Egg yolk
- 240g de Butter or margarine (with over 80% fat)
- 1/2teaspoon de Coconut extract opcionalSubstitui por: essência de baunilha
- 10ml de Vanilla extract opcional
- 500g de Royal icing powder
- 80ml de Water (for icing)
- Food coloring opcional
- Sprinkles/Decorations opcional
Instructions
In a bowl, cream together the softened butter (or margarine) with the confectioners' sugar and the two egg yolks, beating with a spatula until a homogeneous cream forms.
Dica: The butter should not be cold to make it easier to blend.
Add a few drops of extract (coconut or vanilla) to the creamy mixture and mix well.
Dica: If using vanilla extract, the quantity is 10 ml.
Gradually incorporate the all-purpose flour, mixing initially with the spatula.
Dica: The dough should not be kneaded to avoid activating the gluten.
Finish mixing with your fingertips, adding more flour if necessary, until you obtain a dough that pulls away from your hands without being sticky.
Dica: If the dough gets too hard, add a few drops of water.
Divide the dough into smaller portions, flatten slightly inside plastic bags, and refrigerate for at least 30 minutes to firm up.
Dica: Dividing the dough helps speed up the cooling process.
Prepare the royal icing by mixing 500g of the powder with 80 ml of water in a stand mixer, beating for about 5 minutes until you reach the consistency for fluid icing (shiny and dropping in ribbons).
Dica: If the icing powder is lumpy, sifting it before mixing can help.
Separate the icing into portions and add food colorings, mixing well to achieve the desired colors.
Dica: Use vibrant colors to attract attention on the party favors.
Place each color of icing into piping bags (plastic cones), filling them halfway up and twisting the top securely.
Dica: Squeeze the top firmly to prevent leaks.
Remove the dough from the refrigerator and roll it out inside its plastic bag until it reaches a thickness of approximately 3 mm. Using ruler guides can help maintain a uniform thickness.
Dica: You don't need to remove the dough from the bag to roll it out.
Use themed cookie cutters to cut shapes from the rolled-out dough, trimming away the excess dough around the molds.
Dica: Mark all the cookies before removing the excess dough.
Transfer the cut cookies to a baking sheet that has been lightly greased and floured.
Bake the cookies in a preheated oven at 340°F (170°C) or 350°F (180°C) for about 10 to 15 minutes, watching carefully so that only the bottom edges lightly brown.
Dica: Pay close attention to the oven as baking is fast, and the tops should remain pale.
Let the cookies cool completely on a wire rack before moving on to assembling the party favor.
Dica: Wait for them to cool completely to prevent the icing from melting or the cookie from breaking.
To package, place a small amount of sprinkles/decorations in the bottom of a cellophane bag. Then, insert one cookie and a small tube/packet of royal icing (the cookie can be substituted with two smaller ones, if necessary).
Dica: The goal is for the customer to see both the cookie and the icing packet.
Close the bag, either by heat-sealing the top or tying it with a ribbon, ensuring the presentation of the items is attractive.
Dica: Heat sealing is the most professional method, but bows also work well.
