Ingredients
- Beef Short Ribs

- Pepper
- Garlic
- Lime

Instructions
Prepare the marinade by blending salt, pepper, garlic, and lime, and rub this mixture vigorously over all the short rib pieces.
Heat the pork lard in a pot and sear the short ribs in shallow fat until the pieces are nicely browned.
Dica: This shallow searing helps the short ribs develop a good color.
Add the onion, sautéing it quickly. The onion will release liquid, which should be utilized for the cooking process.
Pour in the wine and let it cook, reducing with the onion, until the liquid has partially evaporated.
Add enough water to cover, add the annatto powder and a pinch of salt, and then place the cooked yuca pieces in the pot.
Cover the pot and, once the pressure cooker whistles (or, if using a regular pot, after reaching a boil), maintain cooking for 2 minutes, checking the tenderness of the yuca.
Dica: Check that the yuca is tender and the sauce is thick.
