Recipe inspired by the traditional Icelandic Fish and Chips, presented with a reimagined special sauce based on mayonnaise, served in a thematic Viking presentation.

Ingredients
- 500g de Cod fillet
- 1pinch de Salt
- 1whole de Sicilian lemon zest
- 300ml de Beer
- 20ml de Vodka
- 1teaspoon de Baking powder
- 2,5cup de All-purpose flour
- 1pinch de Smoked paprika
- 1pinch de Onion powder
- Oil
- 200g de Mayonnaise
- 2tablespoons de Chopped fresh parsley and chives
- 1tablespoon de Diced onion
- 1tablespoon de Pickle relish
- 1/2lemon de Squeezed lemon juice
- 1pinch de Pepper (to taste)
- Thyme opcional
- French fries (side dish) opcional
Instructions
Season the cod fillets with salt and the Sicilian lemon zest.
Dica: It is best if the fish is fresh.
Prepare the wet batter by mixing the beer, vodka, 1.5 cups of the all-purpose flour, the baking powder, and a pinch of salt. Adjust consistency by adding more beer if it's too thick or more flour if it's too thin.
Dica: The measuring cup used is 240 ml.
In a separate dish, mix the remaining 1 cup of all-purpose flour with the smoked paprika and onion powder to create the coating mixture.
Dica: Mix the dry coating ingredients well.
Dredge the fish first in the dry flour mixture (step 3) and then dip it into the wet batter (step 2).
Fry the fish fillets in hot oil, using two Forks to handle carefully. Fry until golden brown on both sides.
Dica: Remove the fillets and place them on paper towels to drain excess grease.
Prepare the sauce by blending the 200g of mayonnaise, chopped fresh herbs, diced onion, pickle relish, juice of half a lemon, salt, and pepper to taste in a blender or food processor until smooth.
Dica: The sauce should have a mayonnaise base.
Transfer the sauce to serving containers, such as a thematic boat, if desired.
Assemble the dish by placing the fried fish fillets (and optional French fries) in the serving vessel. Place the sauce on the side, season with a little salt and pepper, and finish with fresh thyme.
Dica: If using a thematic container, use a piece of paper inside the boat for plating.
