Ingredients
- 2whole fish de Fish (Dourado/Mahi-Mahi or suitable firm white fish)
- Salt
- Paprika
- Lime
- slices de Onion
- 1sprig de Thyme
- 1sprig de Cilantro
- Cornmeal (fine grind/Polenta)
Instructions
Make shallow slits across the surface of both sides of the cleaned fish.
Season the fish generously inside and out with salt.
Rub paprika all over the fish, then drizzle with lime juice, ensuring the seasoning penetrates well on both sides.
Open the fish and place onion slices, a sprig of thyme, and a sprig of cilantro inside its cavity.
Close the fish and let it marinate for about 10 to 15 minutes so the flavors are absorbed.
Dica: Let it rest for at least 10 to 15 minutes.
Lightly dust both sides of the fish with cornmeal, without pressing it on too firmly.
Dica: The cornmeal is used only for a light dusting, not for a thick coating.
Fry the fish on a hot disc (griddle) until it is golden brown and fully cooked through.
Dica: Check the doneness; the goal is for the fish to come out nicely 'roasted' or well-done.
