A recipe for holiday cookies that mimic the flavor of Subway cookies, using dried fruits and chocolate.

Ingredients
- 200g de Chopped chocolate
- drops de Vanilla extract
- 155g de All-purpose flour
- 2g de Salt
- 3g de Baking soda
- 75g de Butter or margarine
- 50g de Granulated sugar
- 50g de Brown sugar
- 4count de Chopped candied cherries
- 20g de Golden raisins
- 20g de Dark raisins
- 2count de Chopped dried apricots
- 20g de Chopped nuts
- 1whole de Egg
Instructions
In a bowl, combine all the dry ingredients: all-purpose flour, salt (2g to 3g), and baking soda (3g).
Add the brown sugar and granulated sugar to the dry mix.
Incorporate the butter or margarine and a few drops of vanilla extract into the dry ingredients, mixing with a fork or spoon to avoid excessive gluten development.
Dica: Use a fork or spoon, do not knead the dough like bread, to keep the dough moist and prevent gluten development.
Add the beaten egg and continue mixing until incorporated.
Add the chopped chocolate (or the two 90g bars), candied fruits (cherries, golden and dark raisins, dried apricots), and chopped nuts to the dough.
Dica: Mix all ingredients together in the bowl.
Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Line a baking sheet with parchment paper.
Shape small balls of dough, gently flattening them with your hands, and place them on the baking sheet, leaving some space between them, as the cookies will spread while baking.
Dica: Larger dough balls will result in larger cookies.
Bake the sheet in the preheated oven for 10 to 15 minutes, or until the edges are golden brown and baked through.
Dica: Keep an eye on them, as baking time may vary depending on your oven's power.
Remove the cookies from the oven and let them cool completely before consuming, as they will be soft when hot and firm up as they cool.
Dica: The cookies will last for seven days if stored in a tightly sealed bag.
