Ingredients
- 180g de Bittersweet chocolate chips
- 250g de All-purpose flour
- 100g de Brown sugar
- 170g de Unsalted butter
- 80g de Granulated white sugar
- 1teaspoon de Baking powder
- 1 de Egg
- 50drops de Vanilla extract
Instructions
In a stand mixer, combine the room-temperature butter, brown sugar, and granulated sugar. Add a few drops of vanilla extract.
Dica: The butter should be softened (room temperature), neither melted nor very firm.
Beat the ingredients from the previous step until a smooth cream forms.
Dica: If mixing by hand, use a whisk or a sturdy spoon.
Add the egg and mix lightly until just incorporated.
Add the all-purpose flour and baking powder all at once. Mix on low speed until the dough starts to come together, stopping to scrape down the sides if necessary.
Dica: The final dough should be heavier and firmer.
Fold in the chocolate chips just until combined throughout the dough.
Divide the dough into portions weighing 65g to 70g each, roughly shaping them into rustic balls and placing them on an ungreased baking sheet (no need for parchment paper or greasing).
Dica: The rustic shape is characteristic; no need to form perfect balls.
Distribute a few extra chocolate chips on top of each cookie dough ball to ensure an appetizing look after baking.
Dica: This should be done before pre-chilling.
Place the cookie dough balls in the freezer for approximately 10 minutes to pre-chill, which helps them maintain their shape while baking.
Dica: Pre-chilling prevents the cookies from spreading too much in the oven.
Bake the cookies in a preheated oven at 350°F (180°C) for about 20 minutes, until they are fully baked through, taking your time.
Dica: There is no need to use parchment paper or grease the pan.
